There are a lot of homes where the holidays wouldn’t be complete without eggnog, a sweetened dairy-based beverage traditionally made with milk and/or cream, sugar and whipped eggs that often is topped with cinnamon or nutmeg.
A lot of adults traditionally have liked to combine homemade eggnog with some type of liquor such as brandy, rum, whiskey, bourbon, Kahlua, vodka or a combination of liquors. As for the kids, there is commercial nonalcoholic eggnog that typically is available only in the winter season. (This was a favorite of mine.)
Since homemade eggnog requires cooking, many people settle for the store-bought variety. But here is a recipe for homemade eggnog from McCormick that requires no cooking. Even nicer is the fact that this no-fail treat can be prepared in less than five minutes.
Easy No-Cook Eggnog
1½ cups half-and-half
1 cup egg substitiute
1 cup vanilla ice cream
2 tablespoons sugar
1 tablespoon pure vanilla extract
½ teaspoon ground nutmeg
¼ teaspoon imitation rum extract
Place all ingredients in blender container; cover. Blend 1 minute or until well mixed.
Serve immediately or refrigerate until ready to serve.
Yield: Serves 8 (½ cup each).
Approximate nutritional analysis per serving: 128 calories, 8 grams fat, 9 grams carbohydrates, 25 milligrams cholesterol, 85 milligrams sodium, no fiber, 5 grams protein.
